El Vergel (pronounced El Verhell) is the name of the gardens and orchards which grow in favourable climates throughout Latin America, where the summers are light and breezy and the winters mild. Fruit and vegetables grown in El Vergel are succulent, tasty and fresh.
The El Vergel story began in London almost two decades ago when Stella de Garcia and Kiko Sanhueza developed their unique cuisine. Using traditional recipes, El Vergel cooking brings together the aromatic and spicy dishes of Latin America with the more delicate flavours of the Mediterranean.
All of El Vergel's food is carefully chosen. The meat and poultry must be fresh and tender, the fruit and vegetables sweet and crisp. Everything on the menu is prepared and cooked everyday on the premises.
El Vergel Brussels opened in 2005. Rebecca, Stella's sister, manages the restaurant with Joe, her partner. Stella and Kiko trained all the staff to guarantee the same high quality of food and service as in London.
